我喜欢的吃面条，在我看来，每座城市都有自己的专属面条。我去过不同的城市，品尝过各式本地面条。
我在南京生活了四十年，南京的专属是大碗皮肚面。外地人看来朴简陋与嘈杂，但我就喜欢这种接地气的味道。
可以点全套，也可以自选配料，不同配料价格不同。你可以明确告诉厨师，想在基础版（皮肚面）上额外加些什么食材。
我喜欢额外加鸡蛋、猪肝、香肠、素鸡、多一点青菜，我要中辣，喜欢面条煮得软烂一些。
这些你得大声与厨师自己交代，因为灶台的鼓风机太响。所以，大碗皮肚面馆总是吵吵闹闹的。
我喜欢看厨师操作。一个五大三粗的男子，把鼓风机开得很猛，火开大，锅差不多烧好了，然后放水，按你的要求放各种加上各种食材，然后，火转中，从另外一只锅中，捞出三到五成熟的面条，一起煮，加上辣油，倒入一个大碗中...
如果再到隔壁斩1/4只烤鸭，那就是绝配。冬天吃一碗皮肚面，会让人浑身冒汗。
有时，我要吃常熟浇头面。面条差别不大，但我喜欢他们现场炒菜盖在面上的感觉，我最爱青椒肉丝干拌面，现炒的浇头味道很香。
南京大多数面馆店面宽敞、碗量大。早饭与中饭高峰期，人挤人，很多人都坐在店外。服务员也很多，卫生条件相当一般，整体档次相当不高。
最近住广州，我发现广州的面条风格截然不同。
面馆通常很小，客人不多，通常只有两名员工：一人收银，一人煮面。
面条很细，风味独特，我特别喜欢一种叫“竹升”的面条，吃起来好像方便面，其实是一种手工挂面，很细、很有弹性。广州人也吃米线，但我不太喜欢。
他们不用明火煮面，而在不锈钢桶里烫煮面条。浇头与配菜都是提前做好，放在不锈钢槽里备用。
广州与日本差不多，小吃店都很小、很敞亮、很干净，后厨基本上是不锈钢餐具，一尘不染。没有客人的时候，服务员这里擦擦、那里抹抹。他们都穿工作服（基本上是T恤衫），比南京要干净与整洁得多。
在广州期间，我每天去一家店吃一种面条。到现在为止，我应该吃了十种以上的面条。昨天，吃的是鱼肉竹升面，今天，我吃牛腩竹升面。
分量方便，南京偏多，所以我要嘱咐厨师少下一点面。广州则不同，什么是预先定好的，客人选择大碗或小碗。小碗比大碗便宜两块钱。
我总能把广州面条吃得干干净净，连汤汁都不剩，谁能把大碗皮肚面吃完，最起码留半碗汤。
广州商业氛围很浓厚，而南京要逊色不少。

Noodles are my favorite food, and every city has its own unique noodle style.
I’ve traveled to many places and sampled all sorts of local noodles. I’ve lived in Nanjing for forty years. The city’s signature dish is big bowl fried pork skin noodles（大碗皮肚面）. It may look rather plain, yet I really love its down-to-earth, homely flavor.
Customers can pick their own toppings, and different ingredients come with different prices. You can tell the chef exactly what you’d like in your bowl.
Personally, I’m fond of adding eggs, pork liver, sausage, vegetarian chicken and green vegetables. I prefer medium spice, and I like my noodles cooked nice and soft.
I enjoy watching chefs cook over high heat. They add all my chosen toppings, then change to mid heat and put in the half-cooked noodles to simmer together, and finally drizzle chili oil over the top...Watching this process is very relaxing and soothing.
In winter, a bowl of hot fried pork skin noodles at a restaurant will easily make you break into a sweat.
I also sometimes have Changshu covered noodles（常熟盖浇面）. The noodles themselves taste similar, but I love how they stir-fry fresh ingredients to order and serve them right on top. My go-to choice is green pepper and pork covered noodles.
From what I’ve noticed, most noodle restaurants in Nanjing are spacious with large serving bowls. They tend to get packed with crowds and staff. Still, hygiene is only decent at best, and the overall dining standard feels rather ordinary.
I am living in Guangzhou right now, where the noodle culture is completely different.
Noodle shops in Guangzhou are usually small, bright and quiet, often run by just two people: one handles the checkout, while the other makes the noodles.
The noodles here are thin, known as bamboo pressed noodles(竹升面）, with a distinct local flavor. They have a light, simple taste similar to instant noodles. Rice noodles are also available, but they are not my preference.
They don’t use open fire for cooking. Instead, they blanch noodles in stainless steel pots.All the toppings are pre-cooked and stored in stainless steel serving containers.
Much like Japanese eateries, their kitchens are spotlessly clean. When there are no customers around, the staff keep busy cleaning every corner of the shop.
Compared with colleagues in Nanjing, staff here use T-shirts as work uniforms and always look neat and tidy.
During my time in Guangzhou, I’ve tried nearly every type of local noodle. Yesterday I had fish and beef ball noodles, and today I ordered beef brisket noodles.
It’s quite unlike Nanjing. Nanjing’s portion sizes are overly generous, so you often have to ask the chef to serve less noodles.
There are small and large portions to choose from, with the small bowl costing two to three yuan less.
Guangzhou-style noodles leave me with a totally different impression. I can always finish every last bite, not leaving a drop of soup behind.
Guangzhou boasts a vibrant commercial scene with plenty of dining options, while Nanjing’s commercial atmosphere is far less lively.
